Cashew Chicken
Serves 4
Ingredients:
4 tbls Chantanee Thai Stir Fry Sauce*
2 tbls canola oil
2 chicken breast, sliced
1 onion, cubed
1/4 cup unsalted cashew nuts
2 stalks celery, sliced
2 carrots, sliced
1/2 red and green peppers, cubed
1 table spoon oyster sauce
1/4 cup chicken stock
4 cloves of garlic, crushed
* Chantanee Foods Stir Fry Sauce is available for purchase at both restaurants.
Directions:
Heat the oil in a large skillet or wok on medium and fry garlic until golden brown.
Add chicken and cook thoroughly.
Remove chicken from oil and set aside.
Add vegetables and nuts and cook till vegetables soften.
Add Chantanee Thai Stir Fry Sauce, oyster sauce, chicken and mix well.
Finally, add chicken stock and cook to desired consistency.
To spice add dried chili pepper flakes or add some diced Thai Bird chili peppers with the other vegetables. Serve with rice.
